Ingredients

  • 5 carrots
  • 75g lentils
  • 1cm piece ginger
  • 500mL water
  • 1 tsp salt
  • 1 can tomatoes
  • 1 small can coconut cream
  • 1 tsp ground paprika
  • small handful coriander

Method

  1. Bring a medium pot to medium heat with the water
  2. Toss in the lentils
  3. Chop the carrots into half moons 1cm in thickness and add to the pot
  4. Grate the ginger and add to the pot
  5. Add the salt, canned tomatoes, and paprika
  6. Bring to the boil, reduce the heat and simmer for approximately 20 minutes
  7. Pour into your bowls and top with coriander
  8. Enjoy!
