Ingredients

  • 1/3 cup coconut oil
  • 1 tsp baking soda
  • 2 cup cassava flour
  • 1 cup maple syrup
  • 1 cup cashew butter
  • 1 scoop plain collagen (we love BePure vanilla)
  • 1 tsp vanilla extract
  • pinch salt

Method

  1. Preheat the oven to 180°C / 160°C fan bake and line a baking tray with baking paper
  2. Add all ingredients to a mixing bowl and combine using a hand mixer until fluffy
  3. Scoop out the batter with a heaped tablespoon and lay flat on the baking tray
  4. Bake in the oven for 10 minutes
  5. Option to drizzle with dark chocolate
  6. Enjoy!
