Ingredients
1/3 cup coconut oil
1 tsp baking soda
2 cup cassava flour
1 cup maple syrup
1 cup cashew butter
1 scoop plain collagen (we love BePure vanilla)
1 tsp vanilla extract
pinch salt
Method
Preheat the oven to 180°C / 160°C fan bake and line a baking tray with baking paper
Add all ingredients to a mixing bowl and combine using a hand mixer until fluffy
Scoop out the batter with a heaped tablespoon and lay flat on the baking tray
Bake in the oven for 10 minutes
Option to drizzle with dark chocolate
