Ingredients

  • 1 medium cucumber
  • 1 1/2 cups Greek yoghurt
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp fresh mint
  • 1 lemon
  • 1 clove garlic
  • pinch of salt for seasoning

Method

  1. Finely chop the garlic and mint, halve the lemon
  2. Grate the cucumber
  3. Add the yoghurt, oil, mint, juice of the lemon, garlic and pinch of salt to a bowl, combine
  4. Add the cucumber to the bowl and combine
  5. Enjoy!

Tips:

  • Great with a tabbouleh salad or Buddha bowl
