40g mayonnaise (see recipe or high quality store bought)
Japanese dressing (see recipe or high quality store bought)
1 Tbsp sesame seeds
65g Teriyaki sauce
1 Tbsp Tamari sauce
1 Tbsp water (for the sauce)
Method
Thinly slice the carrot, trim the broccolini and cut in half, roughly chop the coriander and chop the chicken thigh into 2cm chunks on a separate board
Combine the mayonnaise with the Japanese dressing, set aside
Bring a frying pan to medium heat and toast the sesame seeds until golden - approximately 2 minutes, set aside in a small bowl
Return the frying pan to a medium heat with a drizzle of olive oil, adding the carrot, broccolini, and a splash of water, cook until tender - approximately 5 minutes
Season with salt and pepper and set aside in a bowl
Return the frying pan to medium heat with a drizzle of olive oil and add the chicken, tossing until cooked through - approximately 5 minutes
Add the teriyaki sauce, Tamari, water (for the sauce) and cook briefly until thickened
Divide the vegetables between bowls, add the chicken and top with the mayonnaise
