Ingredients

  • 1 bunch broccolini
  • 1 small handful coriander
  • 350 g chicken thigh
  • 40g mayonnaise (see recipe or high quality store bought)
  • Japanese dressing (see recipe or high quality store bought)
  • 1 Tbsp sesame seeds
  • 65g Teriyaki sauce
  • 1 Tbsp Tamari sauce
  • 1 Tbsp water (for the sauce)

Method

  1. Thinly slice the carrot, trim the broccolini and cut in half, roughly chop the coriander and chop the chicken thigh into 2cm chunks on a separate board
  2. Combine the mayonnaise with the Japanese dressing, set aside
  3. Bring a frying pan to medium heat and toast the sesame seeds until golden - approximately 2 minutes, set aside in a small bowl
  4. Return the frying pan to a medium heat with a drizzle of olive oil, adding the carrot, broccolini, and a splash of water, cook until tender - approximately 5 minutes
  5. Season with salt and pepper and set aside in a bowl
  6. Return the frying pan to medium heat with a drizzle of olive oil and add the chicken, tossing until cooked through - approximately 5 minutes
  7. Add the teriyaki sauce, Tamari, water (for the sauce) and cook briefly until thickened
  8. Divide the vegetables between bowls, add the chicken and top with the mayonnaise
  9. Sprinkle sesame seeds on top
  10. Enjoy!
