Ingredients
2 large beetroot
2 Tbsp coconut oil
2 Tbsp balsamic vinegar
small handful parsley
Method
Preheat oven to 180°C bake/ 160°C fan bake and line a baking tray with baking paper
Spiralise the beetroot making noodles add add to a bowl with coconut oil and vinegar, season with salt and pepper
Add to the tray and roast until tender - approximately 20 minutes
Sprinkle parsley over top and divide between bowls
