Ingredients

  • 2 large beetroot
  • 2 Tbsp coconut oil
  • 2 Tbsp balsamic vinegar
  • small handful parsley

Method

  1. Preheat oven to 180°C bake/ 160°C fan bake and line a baking tray with baking paper
  2. Spiralise the beetroot making noodles add add to a bowl with coconut oil and vinegar, season with salt and pepper
  3. Add to the tray and roast until tender - approximately 20 minutes
  4. Sprinkle parsley over top and divide between bowls
  5. Enjoy!
