Ingredients

  • 6 medium potatoes
  • Coconut oil
  • Salt and pepper to season

Method

  1. Preheat the oven to 180°C and line a baking tray with baking paper
  2. Chop the potatoes into 3cm cubed pieces (approximately) and toss in coconut oil
  3. Scatter in a single level on to the tray and season with salt and pepper
  4. Bake in the oven until golden, tossing every so often - for approximately 35 minutes
  5. Remove from the oven, season if necessary
  6. Serve alongside other dishes to complete your meal
  7. Enjoy!
