Ingredients
6 medium potatoes
Coconut oil
Salt and pepper to season
Method
Preheat the oven to 180°C and line a baking tray with baking paper
Chop the potatoes into 3cm cubed pieces (approximately) and toss in coconut oil
Scatter in a single level on to the tray and season with salt and pepper
Bake in the oven until golden, tossing every so often - for approximately 35 minutes
Remove from the oven, season if necessary
Serve alongside other dishes to complete your meal
