Roast Pork Belly
Sesame dressing (see recipe)
3 heads cos lettuce
large handful spinach
2 spring onions
1 carrot
1 small cucumber
handful coriander
small handful alfalfa sprouts
1 Tbsp sesame seeds
Method
Make the sesame dressing (see recipe)
Prepare the salad - thinly chop the spring onions, shred the cos lettuce, julienne the carrots, cucumber and chuck them all into a bowl
Throw in a handful of coriander, spinach, and alfalfa sprouts, gently toss
Heat a frying pan on medium-low heat and toast the sesame seeds
Chop the pork belly into thick slices and place on top of the salad, garnish with sesame seeds and drizzle the sesame dressing over top
