Ingredients

  • 3/4 cup walnuts
  • 3/4 cup desiccated coconut
  • 5 Medjool dates
  • 1 Tbs maple syrup
  • Few drops peppermint extract
  • Dark chocolate melts for topping
  • Optional dried goji berries to garnish

Method

  1. Line an oven tray with baking paper
  2. Place walnuts into blender, blitz until a fine crumb is achieved
  3. Remove the pips from the dates, add to blender, blitz until the dates are finely chopped
  4. Add the remaining ingredients to the blender, blitz until combined
  5. Roll mixture into balls, place on oven tray and flatten into a biscuit shape
  6. Place oven tray in freezer, allow to set for 15 minutes
  7. Once the biscuits are set, fill a large pot with water to halfway and bring to the boil
  8. Place the chocolate in a glass bowl and bring the bowl on top of the pot with the boiling water, stirring continuously until the chocolate has melted
  9. Turn off the heat to the pot
  10. Dip the biscuits into the melted chocolate and place back on the tray
  11. Place tray back in the freezer until the chocolate has set
  12. Enjoy!
