Ingredients

  • 1 can young jackfruit
  • 2 medium celery stalks
  • 3 spring onions
  • 1 red capsicum
  • Mayonnaise (see recipe vegan)
  • 1 clove garlic
  • Fresh dill 3 sprigs
  • 1 lemon
  • 1/2 tsp smoked paprika
  • salt and pepper for seasoning
  • Cos lettuce leaves


Method

  1. Drain and rinse the jackfruit and place onto chopping board in segments
  2. Slice off the fibrous core of each jackfruit segment keeping only the stringy parts
  3. Add to a bowl
  4. Finely chop the celery, spring onions, garlic, capsicum and dill, halve the lemon
  5. Add the celery, onion, garlic, capsicum, and mayo to the jackfruit, combine
  6. Stir in the dill with a squeeze of lemon juice
  7. Roughly chop the lettuce and add to jackfruit
  8. Enjoy!
