Ingredients

  • 6 Tbsp protein powder
  • 4 Tbsp almond meal
  • 1/2 cup almond milk
  • 2 eggs
  • 1/2 tsp baking soda
  • Pinch of cinnamon (optional)
  • Few drops of vanilla extract (optional)
  • Butter or coconut oil for frying

Method

  1. Place all dry ingredients in a bowl, whisk
  2. Crack eggs into the dry ingredients, whisk till combined
  3. Pour milk into mixture, whisk till combined
  4. Heat butter and/or coconut oil in a pan on medium heat
  5. Pour dollops of mixture onto pan and cook till bubbles appear on the surface, flip and cook briefly on the other side
  6. Slide off onto plate, and serve with toppings of your choice. Enjoy!

Tips:

You may need to add more butter and coconut oil to the pan before adding more batter
