Ingredients

  • 3 cloves garlic
  • 1 red chilli
  • 2 Tbsp olive oil
  • 1 lime
  • salt and pepper for seasoning
  • 750g raw prawns
  • 1 tsp balsamic vinegar
  • drizzle extra virgin olive oil
  • Small handful mixed lettuce leaves

Method

  1. Crush and finely chop the garlic, chilli and chop the lime into wedges
  2. Place the garlic, chilli, lime juice, salt and pepper into a medium bowl, whisk until combined well
  3. Add the prawns to the marinade and toss, cover and refrigerate for 15 minutes
  4. Heat a BBQ grill or pan on medium heat with a drizzle of olive oil
  5. Add the prawns to a skewer and cook on both sides until golden - approximately 2 minutes both sides
  6. Add balsamic vinegar and a drizzle of extra virgin olive oil to a bowl with lettuce leaves, toss
  7. Enjoy!
