Ingredients

  • 2 large corguettes
  • 2 Tbsp coconut oil
  • 10 prawns
  • salt and pepper for seasoning
  • 4 cloves of garlic
  • 2 red chilli
  • small handful parsely
  • drizzle extra virgin olive oil
  • 1 lemon

Method

  1. Spiralise the corguettes
  2. Bring a pan to medium heat with a drizzle of coconut oil
  3. Season the prawns and add to the pan cooking for 2 minutes
  4. Finely chop the garlic and chilli
  5. Wipe the pan clean and return to the heat with a drizzle of coconut oil
  6. Add the garlic and chilli, cook until fragrant - approximately 1 minute
  7. Stir in the parsley leaves and coat in the oil
  8. Add the corguette noodles and cook until tender - approximately 2 minutes
  9. Season with salt and pepper, remove from the heat and divide between bowls
  10. Top with the prawns, drizzle of olive oil and a squeeze of lemon
  11. Enjoy!
