2 large corguettes
2 Tbsp coconut oil
10 prawns
salt and pepper for seasoning
4 cloves of garlic
2 red chilli
small handful parsely
drizzle extra virgin olive oil
1 lemon
Method
Spiralise the corguettes
Bring a pan to medium heat with a drizzle of coconut oil
Season the prawns and add to the pan cooking for 2 minutes
Finely chop the garlic and chilli
Wipe the pan clean and return to the heat with a drizzle of coconut oil
Add the garlic and chilli, cook until fragrant - approximately 1 minute
Stir in the parsley leaves and coat in the oil
Add the corguette noodles and cook until tender - approximately 2 minutes
Season with salt and pepper, remove from the heat and divide between bowls
Top with the prawns, drizzle of olive oil and a squeeze of lemon
