Ingredients

  • 8 medium potatoes
  • 1 heaped Tbsp mayonnaise - optional vegan (see recipe or high quality store bought)
  • 1/2 Tbsp nut milk (or alternative)
  • 2 spring onions
  • Salt for seasoning

Method

  1. Cut the potatoes into quarters and place into a medium sized pot
  2. Cover the potatoes with water and add the salt, bring to the boil
  3. Once the water is boiling, reduce the heat and simmer until the potatoes are tender - approximately 15 minutes
  4. Drain the water from the pot and bring back to the heat to slightly crisp the potatoes - 2 minutes
  5. Finely chop the spring onion
  6. Grab a large bowl, add the mayonnaise, milk and spring onion, combine
  7. Place the potatoes in the bowl with the dressing and gently toss the potatoes until they are covered
  8. Serve alongside other dishes to make a complete meal
  9. Enjoy!
