Ingredients

  • 350g pork strips
  • salt and pepper for seasoning
  • 2 large carrots
  • 2 celery sticks
  • 1 onion
  • 3 cups beef broth
  • 2 Tbsp tomato paste
  • 1/3 cup dried plums
  • 4 cloves garlic
  • 2 bay leaves
  • 1 rosemary sprig
  • 1 thyme sprig
  • small handful parsley for garnish
  • Serve with mashed cauliflower high protein / mixed macros
  • Serve with mashed potatoes high carbohydrate / mixed macros

Method

  1. Season the pork with salt and pepper, transfer to a slow cooker
  2. Roughly chop the carrot, celery and onion and add to the slow cooker
  3. Finely chop the garlic and chop the dried plums
  4. In a small bowl whisk the broth, tomato paste and pour over the vegetables
  5. Add the plums, garlic, bay leaves, rosemary, and thyme
  6. Turn the slow cooker on and leave on low while you head off for your day - at least 5 hours
  7. When you come back to it in the evening remove the bay leaves, rosemary and thyme sprigs
  8. Divide between bowls and garnish with parsley
  9. Enjoy!
