Ingredients

  • 900g pork belly (saving some for leftovers)
  • 1 Tbsp coconut oil
  • Salt for seasoning
  • Side dishes to accompany pork belly

Method

  1. Preheat the oven to 240°C
  2. Boil the kettle and place a wire rack over the sink, bring the pork belly onto the wire rack and pour boiling water over the skin, pat dry with a paper towel
  3. Score the belly diagonally being mindful not  to puncture all the way through the skin
  4. Rub coconut oil on the skin and season well with salt, making sure to rub salt into the slits
  5. Place the belly onto a roasting dish and place on the middle rack in the oven until the skin begins to bubble - approximately 35 minutes
  6. Reduce the temperature of the oven to 150°C and continue to roast until tender - approximately 1 hour
  7. Remove from the oven and allow to rest
  8. Serve alongside other dishes or add to a salad
  9. Enjoy!

Make sure the pork belly is as dry as possible before rubbing the coconut oil in
