Ingredients
1 Tbsp olive oil
2 onions
2 sprigs thyme
2 Tbsp honey
2 Tbsp balsamic vinegar
Method
Thinly slice the onion, pick the leaves of thyme
Bring a frying pan to medium heat with a drizzle of olive oil
Add the onion and thyme, cook until golden - approximately 10 minutes
Add honey and stir until combined
Add vinegar and 1/2 cup cold water, bring to the boil, reduce heat to low and simmer until thickened - approximately 5 minutes
Pour into a sealable jar and allow to cool before eating
