Ingredients

  • 1 Tbsp olive oil
  • 2 onions
  • 2 sprigs thyme
  • 2 Tbsp honey
  • 2 Tbsp balsamic vinegar

Method

  1. Thinly slice the onion, pick the leaves of thyme
  2. Bring a frying pan to medium heat with a drizzle of olive oil
  3. Add the onion and thyme, cook until golden - approximately 10 minutes
  4. Add honey and stir until combined
  5. Add vinegar and 1/2 cup cold water, bring to the boil, reduce heat to low and simmer until thickened - approximately 5 minutes
  6. Pour into a sealable jar and allow to cool before eating
  7. Enjoy!
