Ingredients

  • 1 1/2 cups buckwheat flour (option regular flour)
  • 1/2 tsp salt
  • 1/4 cup rolled oats
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 cup chocolate chips (optional dark)
  • 1/2 cup coconut oil
  • 1/2 cup applesauce (see recipe)
  • 2 tsp vanilla extract
  • 3 Tbsp maple syrup (option honey)
  • Option add 2 serves protein powder for high protein / luteal + ovulatory phase

Method

  1. Preheat oven to 180°C bake/ 160°C fan bake, line baking tray with baking paper
  2. In a mixing bowl add dry ingredients - flour, salt, oats, sugar, baking powder, protein powder (if using), and chocolate chips
  3. In a small bowl add the liquid ingredients - coconut oil, applesauce, vanilla extract and maple syrup, whisk
  4. Add wet to dry ingredients, combine forming a batter
  5. Spoon mixture into prepared tray, bake until golden - approximately 25 minutes
  6. Cut into squares
  7. Enjoy!
