Ingredients
1 1/2 cups buckwheat flour (option regular flour)
1/2 tsp salt
1/4 cup rolled oats
1/2 cup brown sugar
1 tsp baking powder
1/2 cup chocolate chips (optional dark)
1/2 cup coconut oil
1/2 cup applesauce (see recipe)
2 tsp vanilla extract
3 Tbsp maple syrup (option honey)
Option add 2 serves protein powder for high protein / luteal + ovulatory phase
Method
Preheat oven to 180°C bake/ 160°C fan bake, line baking tray with baking paper
In a mixing bowl add dry ingredients - flour, salt, oats, sugar, baking powder, protein powder (if using), and chocolate chips
In a small bowl add the liquid ingredients - coconut oil, applesauce, vanilla extract and maple syrup, whisk
Add wet to dry ingredients, combine forming a batter
Spoon mixture into prepared tray, bake until golden - approximately 25 minutes
Cut into squares
