Ingredients

  • 1.5 cups gluten free rolled oats blended into flour
  • 1/2 cup pea protein
  • 1/2 cup rice cake
  • pinch of salt
  • 1/2 cup peanut butter (we like Fix + Fogg)
  • 1/2 cup maple syrup
  • 1 tsp pure vanilla extract
  • 3 Tbsp dark choc chips
  • 1/2 Tbsp coconut oil

Method

  1. Line an 8-inch square pan with baking paper
  2. Mix the oat flour, protein powder, rice cake, and salt in a mixing bowl
  3. Add the nut butter, maple syrup, and vanilla, stir to combine
  4. Press into the pan and smooth out the top
  5. Pop into the freezer
  6. Melt the chocolate chips and oil together in a small pot over low heat
  7. When half the chips have melted remove from heat, stir to melt the remaining chips
  8. After freezing the bars for 10 minutes remove and cover with the melted chocolate, return to the freezer to set for 10 minutes
  9. Slice and enjoy!
