Ingredients

  • 2 eggs (free-range)
  • 1 tsp Dijon mustard
  • 500mL extra virgin olive oil
  • 1 Tbsp apple cider vinegar
  • 1/2 lemon
  • salt for seasoning

Method

  1. Separate the egg yolks from the whites and place the yolks into a bowl
  2. Add the mustard, blend with a hand blender
  3. Using a low speed on the blender gradually add the oil until you have added half
  4. Add the vinegar then turn the blender back on to a low setting and add the remaining oil
  5. Season with salt and a squeeze of lemon
  6. Enjoy!
