Ingredients
2 eggs (free-range)
1 tsp Dijon mustard
500mL extra virgin olive oil
1 Tbsp apple cider vinegar
1/2 lemon
salt for seasoning
Method
Separate the egg yolks from the whites and place the yolks into a bowl
Add the mustard, blend with a hand blender
Using a low speed on the blender gradually add the oil until you have added half
Add the vinegar then turn the blender back on to a low setting and add the remaining oil
Season with salt and a squeeze of lemon
