Ingredients

  • 2 cups brown sugar
  • 1 cup apple cider vinegar
  • 4 mangoes
  • 1 onion
  • 4cm piece of ginger
  • 1 clove garlic
  • 1 tsp mustard seeds
  • 1/4 tsp chilli flakes

Method

  1. Bring a large pot to a medium heat
  2. Add the vinegar and sugar, bring to the boil and simmer stirring until the sugar dissolves
  3. Chop the mangoes into cubes, grate the ginger, finely chop the garlic
  4. Add the remaining ingredients asides from the chilli and allow to simmer until slightly thickened - approximately 45 minutes, stirring occasionally
  5. In the final 10 minutes add the chilli and stir
  6. Remove from the heat and allow to cool, pour into the jars and allow to cool completely before sealing
  7. Enjoy!
