Ingredients

  • Butter for greasing
  • 1 1/2 cups almond meal
  • 6 Tbsp psyllium husk
  • 3 tsp baking powder
  • large pinch salt
  • 1/4 cup melted coconut oil
  • 4 eggs (free-range)
  • 1/2 cup sour cream

Method

  1. Preheat oven to 180°C bake/ 160°C fan bake and prepare a loaf tin by greasing with butter
  2. Add all the ingredients in a bowl, combine and allow to sit for 15 minutes
  3. Once the mixture has dried fill the prepared loaf tin
  4. Scatter pumpkin seeds on top and place in to the oven, bake until golden - approximately 25 minutes
  5. Enjoy!
