Ingredients

  • 1 large Kumara
  • Coconut oil for cooking
  • Toppings - peanut butter and jam or alternative

Method

  1. Preheat the oven to 220°C / 200°C fan bake and line a baking tray with baking paper
  2. Slice the kumara into pieces 2cm in thickness and toss in coconut oil
  3. Add to the baking tray and bake for 35 minutes
  4. Top with peanut butter and jam or whatever else you feel like!
  5. Enjoy!

Tips:

  • Make sure you coat the Kumara in oil before baking to avoid getting any dry bits!
