Ingredients

  • 1 ripe banana
  • 1 small kumara
  • 1 1/2 cup almond meal
  • 1/2 cup maple syrup
  • 1 egg (free-range)
  • 1/3 cup butter melted
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • pinch salt
  • 1/2 cup chocolate chips

Method

  1. Preheat the oven to 180°C / 160°C fan bake and grease a loaf tin
  2. Peel and chop the kumara into 3cm pieces
  3. Bring a pot of water to the boil and add the kumara, boil until tender
  4. In a mixing bowl add the egg, banana, and kumara, mash
  5. Add remaining ingredients asides from the chocolate and mix well
  6. Pour batter into the loaf tin and bake for 55 minutes
  7. In the final 5 minutes drop the chocolate on top and allow to melt
  8. Enjoy!

Tips:

  • Allow the Kumara to cool before adding the eggs - mash it and spread it to the sides of the bowl to cool faster
