Ingredients

  • 1 medium kumara
  • 3 eggs (free-range)
  • 1/4 cup melted coconut oil
  • 1/4 cup honey
  • 1/2 tsp vanilla extract
  • 2 Tbsp coconut flour
  • 4 Tbsp cocoa powder
  • 1/4 tsp baking soda
  • Pinch of salt
  • 3 Tbsp chocolate chips

Method

  1. Preheat oven to 180°C bake/ 160°C fan bake and line an 8 inch baking dish with baking paper
  2. Microwave kumara on high for 4-5 minutes
  3. Peel kumara, chop into quarters and place in blender
  4. Add eggs, coconut oil, honey, and vanilla extract, blitz
  5. In a bowl combine the dry ingredients - flour, cocoa powder, baking soda, and salt
  6. Pour the ingredients out of the blender and into the bowl with the dry ingredients, combine
  7. Add chocolate chips, combine
  8. Pour mixture into baking dish and put in the oven, bake for 30 minutes
  9. Allow to cool then slice to desired size
  10. Enjoy!

Tips:

Use damp hands to combine the chocolate chips to the mixture and spread over the baking dish
