Ingredients

  • 1/2 chinese cabbage
  • 1 daikon
  • 1 carrot
  • 1 onion
  • 2 tsp salt
  • 3 garlic cloves
  • 3cm piece of ginger
  • 3 long red chilli
  • 2 large handful coriander stalks
  • 1 Tbsp chilli powder
  • 1 sachet vegetable starter culture

Method

  1. Remove the outer leaves of the cabbage, take one leaf and wash it thoroughly then keep to the side
  2. Place the rest of the cabbage in a food processor with the daikon, carrot, and onion, finely shred (alternatively you can finely chop with a knife)
  3. In a large bowl combine the vegetables and season with salt, combine well
  4. Prepare the aromatics - finely chop the garlic and coriander stalks, grate the ginger, deseed and finely slice the chilli
  5. Add the aromatics to the bowl with the vegetables along with the chilli powder
  6. Prepare the starter culture according to packet instructions and add to the vegetable mix, combine well
  7. Fill the jar with the vegetable mix, pressing down with a potato masher to remove any air pockets, leaving a 2cm gap at the top and adding more water if the vegetables aren't completely submerged
  8. Fold the reserved cabbage leaf and cover the top of the vegetables adding a glass weight to keep everything submerged
  9. Close the lid and wrap the jar with a tea towel to block out the light
  10. Store in a dark cupboard at room temperature for 2 weeks
  11. Before eating remove the tea towel, pace in the fridge and chill for a few hours
  12. Will keep for 2 months in the fridge when submerged in the liquid and unopened in the fridge for 9 months
