Ingredients

  • 2 cups kale
  • 1/4 red cabbage
  • 1/2 carrot
  • 1/2 red onion
  • French vinaigrette
  • Optional mayonnaise (vegan) and almond milk

Method

  1. Roughly chop the kale and cabbage, place in a medium bowl
  2. Grate the carrot into the bowl
  3. Finely slice the red onion and add to the bowl
  4. Choose between a creamy kaleslaw or a light version by using either 2 Tbsp mayonnaise and 1 Tbsp almond milk or a French vinaigrette and toss
  5. Enjoy!
