2 cups kale
1/4 red cabbage
1/2 carrot
1/2 red onion
French vinaigrette
Optional mayonnaise (vegan) and almond milk
Method
Roughly chop the kale and cabbage, place in a medium bowl
Grate the carrot into the bowl
Finely slice the red onion and add to the bowl
Choose between a creamy kaleslaw or a light version by using either 2 Tbsp mayonnaise and 1 Tbsp almond milk or a French vinaigrette and toss
