Ingredients

  • 9 Jalapeno peppers (fresh)
  • 1/2 brown onion
  • 2 large cloves garlic
  • large handful coriander
  • 2 limes
  • Salt
  • Drizzle of olive oil

Method

  1. Heat a pan on medium-high heat
  2. Chop onion in half and remove skin
  3. Place jalapenos, onion, and garlic (keep the skin on) onto the pan, char (blacken) and flip to cook other side - approximately 20 minutes
  4. Remove the skin from the garlic, chop the stems off the jalapenos, remove the core of the onion and add to the blender along with the onion, coriander, salt, and water
  5. Squeeze the lime juice into blender, blitz till a nice consistency has formed - approximately 30 seconds
  6. Bring the pan back to a medium heat  with a drizzle of olive oil, add the salsa
  7. Once salsa has heated through lower the heat and allow to simmer for 5 minutes
  8. Enjoy!

Will keep in airtight jar in the fridge for 2 weeks
