Ingredients

  • 1 large avocado
  • 1 medium tomato
  • 1/2 red onion
  • small handful coriander
  • 1/2 red chilli (if using)

Method

  1. Deseed and remove the flesh of the avocado - discard the skin and seed
  2. Place into a bowl
  3. Finely chop the tomato, red onion, and chilli if using
  4. Use your fork to mask the avocado to desired consistency then add the tomato, onion, coriander leaves, and chilli, stir to combine
  5. Serve alongside corn chips, eggs, or whatever you fancy
  6. Enjoy!
