Ingredients

  • 1 1/4 cup nuts (almonds, Brazil nuts, macadamia nuts)
  • 2 cups puffed buckwheat (option oats)
  • 1/4 cup coconut flakes
  • 2 Tbsp seeds (chia, sunflower)
  • 1 tsp salt
  • 1/4 cup melted coconut oil
  • 1/3 cup sweetener (honey or maple syrup)
  • 1/3 cup dried cranberries
  • 1/3 cup cacao nibs (optional)

Method

  1. Preheat oven to 180° bake and line an oven tray with baking paper
  2. Add nuts to processor and blitz to desired consistency, pour into a bowl
  3. Add puffed buckwheat (if using), coconut flakes, seeds and salt
  4. Melt coconut oil in a pot, add sweetener and stir till combined
  5. Pour sweetener mixture over dry ingredients and stir till combined (clumpy bits are a-okay)
  6. Sprinkle mixture onto oven tray evenly to achieve a single layer and bake for 20 - 25 minutes turning gently every 8 minutes
  7. Remove from oven and allow to cool completely
  8. Add dried fruit (if using cacao nibs add here)
  9. Pour into a glass jar and enjoy
