Ingredients

  • 2 eggs (your way)
  • 1 red chilli (deseed)
  • 8 dried apricots
  • 8 cherry tomatoes
  • 3 Tbsp extra virgin olive oil
  • 1/2 lemon (juiced)
  • Large handful of spinach
  • Large handful of mixed sprouts
  • 40g seeds (sesame, pumpkin, chia)
  • 1 Lebanese cucumber
  • 1 large tomato
  • 1 avocado
  • 40g nuts (walnuts, peanuts)
  • Large handful of herbs (coriander, mint)
  • get creative and add any fruits + veggies you fancy

Method

  1. Cook the eggs your way (see recipe)
  2. While the eggs are cooking prepare the salad
  3. Roughly chop the chilli, apricots and tomatoes - add to jug with a few leaves of coriander and mint, blitz to desired texture
  4. Add olive oil, lemon juice, season and blitz briefly
  5. Place spinach, gem lettuce, sprouts, seeds, nuts into bowls
  6. Remove the stone from the avocado, quarter
  7. Finely chop the radish, slice the tomato
  8. Chop the cucumber into matchsticks, julienne the carrots, add remaining vege to bowls
  9. When the eggs are ready add to the bowl and cover with the dressing
  10. Enjoy!

Tips:

If you don't have access to a glass jug just use a deep bowl- making sure the dressing doesn't escape!
