Ingredients

  • 1 small avocado
  • 1 cup brown sugar
  • 1/3 cup maple syrup
  • 2 Tbs coconut oil
  • 1 Tbsp chia seeds
  • 2 tsp vanilla extract
  • 2 tsp roasted coffee
  • 1/3 cup dark chocolate chips
  • 1 1/4 cup whole grain spelt flour (or alternative)
  • 3/4 cup cacao powder
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt

Method

  1. Preheat oven to 180°C bake/ 160°C fan bake and line an 8 inch baking dish with baking paper
  2. In a large bowl, smash the avocado
  3. Using a hand blender, blitz until smooth
  4. Add brown sugar, maple syrup, oil, chia seeds, vanilla extract, and coffee, blitz until combined
  5. In another bowl sift together the flour, cocoa, baking powder, baking soda, and salt
  6. Slowly add the dry ingredients to the wet, combining as you go
  7. Stir in chocolate chips
  8. Pour mixture onto the baking dish and smooth out evenly
  9. Place in oven, bake for 20-25 minutes
  10. Remove from oven and cool for 20 minutes then place in the freezer for 30 minutes until it is set
  11. Remove and slice into desired size
  12. Enjoy!
