Ingredients

  • 500g courgettes
  • 4 cups buckwheat flour
  • 2 Tbsp baking powder
  • 150g unsalted butter
  • 2 tsp dried chilli flakes (optional)
  • 200g feta cheese
  • 2 eggs (free-range)

Method

  1. Preheat oven to 180°C bake/ 160°C fan bake
  2. Line oven tray with baking paper
  3. Grate corguette into a mixing bowl, squeeze and discard liquid
  4. Add flour, baking powder, and salt
  5. Chop and add butter, combine
  6. Add chilli flakes (if using), thyme and crumble in feta cheese
  7. Crack the eggs into the bowl, combine
  8. Wrap and rest for 15 minutes
  9. Flour a surface and roll the dough into a 3cm thick slab, cut to desired size
  10. Place on oven tray and bake until golden - approximately 20 minutes

Tips:

Keep butter cold so you can crumble into the mixtureWhen adding the eggs create a well with the dry ingredients and crack into the dip
