Ingredients

  • 1 large cup popcorn
  • 1 can sweetcorn
  • 1 iceberg lettuce
  • 4 spring onions
  • 30g cheese
  • 30g blue cheese
  • 6 Tbsp greek yoghurt
  • 1/2 clove garlic
  • 2 tsp mustard
  • 2 Tbsp apple cider vinegar
  • 1 tsp Worcestershire sauce
  • small handful coriander

Method

  1. Add the popcorn to a large serving bowl
  2. Drain the sweetcorn
  3. Bring a frying pan to medium heat and add the sweetcorn, cook until golden - approximately 4 minutes, add to the bowl with the popcorn
  4. Trim and roughly chop the lettuce, slice the spring onion and add to the bowl
  5. Break the cheese into a blender and add the yoghurt, garlic, mustard, vinegar, and Worcestershire sauce, blitz until smooth then season with salt and pepper
  6. Pour over the dressing, toss and garnish with the coriander
  7. Enjoy!
