Ingredients

  • 4 eggs (your way)
  • Rosti (option kumara rosti for high protein)
  • Creamy mushrooms
  • 2 sausages and/or
  • 4 rashers of streaky bacon
  • 1 medium tomato
  • Handful of spinach
  • Salt and pepper to season
  • Butter and coconut oil for frying

Method

  1. See recipes for eggs, rosti and creamy mushrooms
  2. Chop tomato in half, season with salt and pepper
  3. Melt coconut oil in frying pan at medium to low heat
  4. Place tomato flat side down in frying pan and cook till slightly browned
  5. Wilt spinach in butter, season with salt and pepper
  6. Place all ingredients on a plate, enjoy!

  • Rosti
  • Creamy mushrooms
  • Sausages/ bacon
  • Eggs
  • Tomato and spinach

Turn the oven on low heat and place the items in at completion of cooking to keep them nice and warm
