Ingredients

  • 2 Tbsp psyllium husk
  • 1/2 cup coconut flour
  • 1 cup warm water
  • 1 Tbsp olive oil + extra for cooking
  • 1/4 tsp baking soda
  • 1/4 tsp salt

Method

  1. In a medium mixing bowl add the psyllium husk and coconut flour
  2. Create a well in the centre and add the water, olive oil, and baking soda
  3. Using a knife stir the mixture together then knead the dough with your hands
  4. Add the salt and knead for 1 minute
  5. Set aside for 10 minutes
  6. Cut the dough into quarters and lay on baking paper
  7. Grab another sheet of baking paper and lay on top of the dough then use a rolling pin to roll out the dough until each piece is 20cm in diamter
  8. Unpeel the baking paper and continue steps 6 + 7 with the remaining batter
  9. Bring a non-stick frying pan to medium heat and add a drizzle of olive oil to a paper towel then rub onto the pan
  10. Flip the bread onto the pan and peel off the baking paper
  11. Fry until golden - approximately 4 minutes in total
  12. Serve alongside any curries, or tuna poke
  13. Enjoy!
