Ingredients
2 Tbsp psyllium husk
1/2 cup coconut flour
1 cup warm water
1 Tbsp olive oil + extra for cooking
1/4 tsp baking soda
1/4 tsp salt
Method
In a medium mixing bowl add the psyllium husk and coconut flour
Create a well in the centre and add the water, olive oil, and baking soda
Using a knife stir the mixture together then knead the dough with your hands
Add the salt and knead for 1 minute
Set aside for 10 minutes
Cut the dough into quarters and lay on baking paper
Grab another sheet of baking paper and lay on top of the dough then use a rolling pin to roll out the dough until each piece is 20cm in diamter
Unpeel the baking paper and continue steps 6 + 7 with the remaining batter
Bring a non-stick frying pan to medium heat and add a drizzle of olive oil to a paper towel then rub onto the pan
Flip the bread onto the pan and peel off the baking paper
Fry until golden - approximately 4 minutes in total
Serve alongside any curries, or tuna poke
