Ingredients

  • 800g boiling potatoes
  • 2 Tbsp olive oil
  • 3 chorizo sausages
  • large handful spinach
  • 4 Tbsp apple cider vinegar
  • small handful herbs (chives, basil, cress)
  • Salt and pepper for seasoning

Method

  1. Bring a large pot of salted water to the boil
  2. While the water is boiling chop the chorizo into pieces 1cm in thickness, and roughly chop the spinach, and mixed herbs
  3. When the water is boiled add the potatoes and cook until tender - approximately 20 minutes
  4. bring a frying pan to medium heat and add a drizzle of olive oil
  5. Halve the potatoes and add to the pan with the chorizo until golden brown
  6. Place the spinach in a bowl, add the potatoes, chorizo, herbs, and vinegar
  7. Season with salt and pepper, toss
  8. Enjoy!
