1 head of cauliflower
2 Tbsp coconut oil
1/2 cup coconut cream or milk
Method
Place the cauliflower into a food processor (you may need to break it up a bit) and pulse into fine pieces that resemble rice
Bring a large frying pan to a medium heat with the coconut oil
Add the cauliflower and coconut cream or milk, cook until softened - approximately 5 minutes
Season with salt and pepper
Serve alongside other dishes to make a complete meal
