Ingredients

  • 10cm piece sourdough
  • 2 cloves garlic
  • Caesar salad dressing (see recipe or good quality store bought)
  • 2 eggs (free-range)
  • 4 rashers bacon
  • 2 heads gem lettuce
  • 20g parmesan cheese

Method

  1. Crush and finely chop garlic
  2. Chop sourdough into small pieces - roughly 1 cm in size
  3. Heat frying pan on low heat and add a good drizzle of olive oil - once oil is heated add the garlic and cook until fragrant
  4. Add sourdough to pan and toss around - coating in the garlic oil. Once sourdough is golden remove from heat and set aside
  5. Prepare the dressing (see recipe) and set aside
  6. Prepare 2 boiled or poached eggs (see recipe) and set aside
  7. Heat frying pan to medium and place 4 strips of streaky bacon (or alternative) in the pan - cook until browned on both sides
  8. Chop the gem lettuce and place into salad bowl
  9. Chop the bacon into 1 cm sized pieces, add to bowl
  10. If using boiled eggs chop into quarters and place on top, otherwise place poached eggs on top
  11. Garnish with shaved Parmesan cheese
  12. Drizzle dressing on top
  13. Enjoy!
