Ingredients

  • 1/4 red cabbage
  • 1 cos lettuce
  • 1 apple (granny smith)
  • 2 carrots
  • 3 spring onions
  • handful coriander
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp apple cider vinegar
  • Salt and pepper for seasoning

Method

  1. Add vinegar and mustard to a large bowl, whisk to combine
  2. Finely chop the cabbage, lettuce, spring onion, coriander, and apple, add to bowl
  3. Grate the carrot, add to bowl
  4. Toss the slaw to combine with dressing
  5. Enjoy!
