Ingredients

  • 500g Brussel sprouts
  • 3 Tbsp coconut oil
  • salt and pepper for seasoning
  • 3 Tbsp maple syrup

Method

  1. Preheat oven to 180°C bake/ 160°C fan bake and line a baking tray with baking paper
  2. Trim the stems off the Brussels and remove any outer leaves that have wilted
  3. Chop the Brussels in half
  4. Add to the tray, toss in coconut oil and salt and pepper
  5. Lay them in a flat layer, roast for 25 minutes flipping over halfway
  6. Drizzle with the maple syrup, toss and roast for a further 8 minutes
  7. Enjoy!
