Ingredients
Mayonnaise (see recipe or high quality store bought)
1 avocado
2 wraps (coconut pita for high protein / ovulatory + Luteal phase or gluten-free for high carbohydrate / follicular phase)
1 tomato
4 rashers streaky bacon
2 handfuls shredded iceberg lettuce (or alternative)
salt and pepper for seasoning
Method
Bring a frying pan to medium heat, once warm add the bacon strips and cook until browned on both sides - approximately 5 minutes in total
Rinse the frying pan and return to a medium-low heat, add the wraps and toast until slightly golden on each side - 1 minute in total
Bring the wraps to a board
Shred the lettuce and fill the wrap
Lie the bacon length-ways down the middle
Slice the avocado flesh and tomato and place on the bacon
Drizzle the mayonnaise over top of the fillings, season to taste, roll up each wrap
