Ingredients

  • Mayonnaise (see recipe or high quality store bought)
  • 1 avocado
  • 2 wraps (coconut pita for high protein / ovulatory + Luteal phase or gluten-free for high carbohydrate / follicular phase)
  • 1 tomato
  • 4 rashers streaky bacon
  • 2 handfuls shredded iceberg lettuce (or alternative)
  • salt and pepper for seasoning

Method

  1. Bring a frying pan to medium heat, once warm add the bacon strips and cook until browned on both sides - approximately 5 minutes in total
  2. Rinse the frying pan and return to a medium-low heat, add the wraps and toast until slightly golden on each side - 1 minute in total
  3. Bring the wraps to a board
  4. Shred the lettuce and fill the wrap
  5. Lie the bacon length-ways down the middle
  6. Slice the avocado flesh and tomato and place on the bacon
  7. Drizzle the mayonnaise over top of the fillings, season to taste, roll up each wrap
  8. Enjoy!
