Ingredients
1 large cucumber
1 tsp dried chilli flakes
1 tsp Szechuan pepper
2 Tbsp sesame seeds
2 Tbsp Tamari sauce
2 Tbsp balsamic vinegar
1 1/2 tsp sesame oil
Method
Bang the cucumber with your fist - attempting to flatten
Use your fork to create grooves length-ways down the sides and roughly chop, add to a bowl with a pinch of salt
Scrunch up the cucumber and set aside
Bring a pan to low heat and add the chilli flakes, sesame seeds, and Szechuan pepper, toast until fragrant
Drain the cucumber and add to a serving bowl
Drizzle Tamari sauce, vinegar, and sesame oil over top and sprinkle with the aromatics in the pan
Toss, enjoy!
