Ingredients

  • 1 large cucumber
  • 1 tsp dried chilli flakes
  • 1 tsp Szechuan pepper
  • 2 Tbsp sesame seeds
  • 2 Tbsp Tamari sauce
  • 2 Tbsp balsamic vinegar
  • 1 1/2 tsp sesame oil

Method

  1. Bang the cucumber with your fist - attempting to flatten
  2. Use your fork to create grooves length-ways down the sides and roughly chop, add to a bowl with a pinch of salt
  3. Scrunch up the cucumber and set aside
  4. Bring a pan to low heat and add the chilli flakes, sesame seeds, and Szechuan pepper, toast until fragrant
  5. Drain the cucumber and add to a serving bowl
  6. Drizzle Tamari sauce, vinegar, and sesame oil over top and sprinkle with the aromatics in the pan
  7. Toss, enjoy!
