Ingredients

  • 2 medium bananas (ripe)
  • 3 eggs (free-range)
  • 1/2 can crushed pineapple in juice
  • 80g butter
  • 1 Tbsp coconut sugar
  • 1 tsp vanilla extract
  • 1 Tbsp cinnamon
  • 2 cups almond meal
  • 1 tsp baking powder

Method

  1. Preheat oven to 180°C bake/ 160°C fan bake and grease a 12 muffin tray with butter
  2. Melt butter in a small dish and allow to cool slightly
  3. Mash bananas in a mixing bowl
  4. Add wet ingredients to the bananas - eggs, pineapple, butter, and vanilla, combine
  5. Add dry ingredients - sugar, cinnamon, almond meal, and baking powder, combine as you go
  6. Pour evenly into the muffin holes of the muffin tray, place in oven and bake until golden - approximately 25-30 minutes
  7. Allow to cool
  8. Enjoy!
