Ingredients

  • Drizzle of olive oil
  • 1 onion
  • 2 cloves garlic
  • 1 large carrot
  • 1/2 tsp cumin
  • 2 tsp smoked paprika
  • 1/2 tsp dried thyme and rosemary (option m ixed herbs)
  • 1 can chopped tomatoes
  • 1/4 cup BBQ sauce (option tomato sauce)
  • 2 cans beans (cannelini, butter, kidney)
  • 1 Tbsp Worcestershire sauce
  • 4 eggs your way(see recipe)
  • Fresh parsley
  • Parmesan cheese (optional)
  • Salt and pepper to season

Method

  1. Preheat oven to 220°C bake/ 200°C fan bake and line an oven tray with baking paper
  2. Chop onion into 2cm wedges, finely chop garlic, chop carrots into half moons 1cm thick- add to oven tray
  3. Season with cumin, paprika, bake until softened and browned - approximately 15 minutes
  4. Add canned tomatoes, beans, Worcestershire sauce, BBQ sauce, dried thyme and rosemary to the tray, combine and bake for a further 45 minutes
  5. Season with salt and pepper, combine in final 10 minutes of cooking
  6. Serve with eggs your way (see recipe), sprinkle cheese over top (if using) and garnish with fresh parsley
  7. Enjoy!
