Ingredients

  • 400g leftover meat (pork belly, chicken)
  • 2 Tbsp pate
  • 2 heads cos lettuce
  • 1 carrot
  • 1/4 daikon
  • 2 spring onions
  • Handful of herbs (Thai basil, mint, Vietnamese mint, coriander)
  • 1 red chilli (if using)
  • 1 Tbsp coconut aminos
  • 1 Tbsp extra virgin olive oil
  • 1 tbsp water (for the dressing)

Method

  1. Lay the lettuce leaves on a platter and top with pate
  2. Fill with your meat of choosing (our fav is leftover pork belly)
  3. Shred the carrot, and daikon, thinly slice the spring onion,  and place inside the lettuce cups
  4. For the dressing mix the coconut aminos with water for the dressing and olive oil, drizzle over top of your cups
  5. Garnish with herbs of your choice, chilli, and ENJOY!
