Ingredients

  • 2 Tbsp chia seeds
  • 3 Tbsp maple syrup
  • 2/3 cup coconut flakes
  • 2/3 cup silvered and blanched almonds
  • 200g dark chocolate chips

Method

  1. Grease a tray with butter or coconut oil
  2. In a small bowl combine chia seeds and maple syrup - sit aside
  3. Place coconut and almonds into a blender, blitz until finely chopped
  4. Pour chia mix into blender, blitz until sticky dough forms
  5. Bring small pot of water to the boil - filled to halfway
  6. While the water is heating measure 1 Tbsp of mixture, roll in hands and set aside
  7. Repeat step 4 with remaining mixture
  8. Melt the chocolate chips by placing into a glass bowl and placing on top of boiling water, stir continuously
  9. Roll each ball in the melted chocolate and set aside on the prepared plate
  10. Repeat step 9 with the remaining balls
  11. Place tray in fridge on a flat surface and set for an hour
  12. Enjoy!

Can keep in fridge for a week in an airtight container (if they last that long!)

Tips:

When blitzing the wet and dry ingredients be mindful not to blitz for too long - just till combined

Use damp hands to roll the balls to prevent sticking
